Ingredients

To Strengthen Your Sourdough Starter

  • 20g sourdough starter

  • 150g strong white bread flour

  • 30g caster sugar

  • 150g warm water

For the Buns

  • 500g strong white bread flour

  • 60g caster sugar

  • 1 tsp cinnamon

  • 1 tsp mixed spice

  • Zest of 1 orange

  • 150g sultanas

  • 150g soft salted butter (cubed)

  • 2 large eggs (whisked, reserving 2 tbsp for brushing)

  • 200ml warm milk

For the Glaze (Optional)

  • 1 tbsp apricot jam

  • A splash of boiling water

Step 1: Strengthen Your Starter

For the best results, prepare your sourdough starter the night before baking.

  1. In a clean bowl, combine 20g of sourdough starter, 150g of strong white bread flour, 30g caster sugar, and 150g warm water.

  2. Mix well, cover, and leave overnight at room temperature.

Step 2: Making the Dough

  1. Weigh out 200g of your strengthened starter into a stand mixer bowl or large mixing bowl.

  2. Add caster sugar, cinnamon, mixed spice, orange zest, sultanas, warm milk, flour, and eggs (reserving 2 tbsp of whisked egg for later).

  3. Using a dough hook, mix the dough for 5 minutes, then let it rest for 30 minutes.

    • If mixing by hand, combine ingredients until a shaggy dough forms, then knead for 10 minutes before resting.

  4. After resting, mix in the butter one cube at a time until fully incorporated.

    • If kneading by hand, work the butter into the dough as best as you can.

  5. Cover with cling film and let it rise in a warm place until it has increased by 40-50% (about 3-4 hours, depending on room temperature).

Step 3: Shaping the Dough

  1. Once risen, divide the dough into 12 equal portions (approximately 100g each).

  2. Shape each piece into a ball and place them on a baking tray lined with parchment paper.

  3. Cover with a damp tea towel and allow them to double in size at room temperature or refrigerate overnight for enhanced flavor.

Step 4: Pre-Baking Preparation

  1. If you refrigerated the dough overnight, allow it to sit at room temperature for an hour before baking.

  2. Preheat the oven to 180°C (356°F).

  3. Brush the buns with the reserved whisked egg for a golden crust.

  4. Mix the remaining starter with a splash of water to create a thick paste, then pipe crosses over the buns.

Step 5: Baking

  1. Bake for 20-25 minutes or until golden brown.

  2. To check doneness, insert a temperature probe into a bun; the internal temperature should be 90°C (194°F).

Step 6: Glazing

  1. If using the glaze, mix apricot jam with a splash of boiling water.

  2. Brush over the warm buns for a glossy finish.

  3. Allow the buns to cool slightly before serving.

Storage Tips

Store in an airtight container at room temperature for up to 3 days or freeze for longer shelf life.

Frequently Asked Questions (FAQ) About Sourdough Hot Cross Buns

How long do sourdough hot cross buns stay fresh?
Sourdough hot cross buns stay fresh for up to 3 days when stored in an airtight container at room temperature. For longer storage, freeze them for up to 3 months and reheat before serving.

Can I use whole wheat flour instead of white flour?
You can substitute part of the flour with whole wheat, but keep in mind that this may result in a denser bun. A 50/50 mix works well.

What can I use instead of sultanas?
Try raisins, currants, dried cranberries, or even chopped chocolate for a fun twist.

Why is my dough not rising?
This could be due to an inactive starter, cold room temperature, or insufficient proofing time. Make sure your starter is bubbly and active before using it.
