Ingredients 

For the Traybake for 4 people:

  • 4 bone-in, skin-on chicken thighs

  • 600g potatoes cut into large bite size pieces

  • 150g (5 oz) chorizo, sliced into rounds

  • 1 red onion, cut into wedges

  • 1 red bell pepper, sliced

  • 1 yellow bell pepper, sliced

  • 3 tbsp olive oil

  • 1 tsp garlic granules

  • 1 ½ tsp smoked paprika

  • 1 tsp salt

  • ½ tsp black pepper

For the Smoked Paprika Garlic Aioli:

  • 4 tbsp mayonnaise

  • 1 garlic clove, minced

  • ½ tsp smoked paprika

  • 1 tsp lemon juice

  • Pinch of salt


Instructions

Step 1: Preheat & Prep the Potatoes

Preheat your oven to 200°C. In a large baking tray, toss the halved potatoes with 2 tbsp olive oil, garlic granules, smoked paprika, salt, and pepper. Spread them out evenly and bake for 15 minutes to start crisping up.

Step 2: Add the Chicken & Veggies

After 15 minutes, remove the tray from the oven. Add the chicken thighs (skin-side up), chorizo slices, onion wedges, and bell peppers. Drizzle with the remaining 1 tbsp olive oil, tossing everything lightly around the chicken.

Step 3: Bake Until Golden & Crispy

Return the tray to the oven and bake for 30-35 minutes, or until the chicken skin is crispy, the potatoes are golden, and the chicken juices run clear when pierced.

Step 4: Make the Aioli

While the traybake is cooking, mix all the aioli ingredients in a small bowl. Set aside.

Step 5: Serve & Enjoy!
